Egg Fried Rice

You know, I never used to like egg fried rice, because I don't typically like scrambled eggs, but a while ago I would randomly get in the mood for it. I love white rice on its own, so why not make something new for myself. I do prefer plain, simple rices, though, so that's what I had made! Egg fried rice does great on it's own as an entree, or as a side.









 

Ingredients:


- 2 eggs*

- 2 cups chicken broth*

- 2 cups rice

- 3 tablespoons soy sauce

- 3 tablespoons teriyaki sauce

- Oil or butter

Recipe:


- Combine the broth and rice, and prepare however you prefer, whether that be on the stove top, in a rice cooker, or in a microwave. Cook, and set aside.


- Crack the eggs into a small bowl and whisk until combined.


- On medium heat, add the egg to a pan with light oil or butter, and scramble. If using an egg substitute, prepare in whichever way the directions call for.


- Turn the heat down to medium-low, and add in the soy sauce and teriyaki sauce, and give a light stir.


- Add in the rice, and fry for 3-5 minutes, stirring every so often.


- Top with any garnish if you'd like, and you're done!


 

Notes and things I learned along the way:


As this is just more of a base recipe, you can really customize it however you want!


Great additions would be peas, carrot, onion, and peppers.


This has been a really simple, easy food to make in a pinch as it is only a few ingredients and cooks quick.


It is also a great food to have around if you are feeling under the weather!
