Asian flavored chicken recipes are my all time favorite, but orange chicken definitely takes the cake. I have a more "advanced recipe I will post later on, but this is probably one of my top go-to recipes for a simple dinner!
Ingredients:
For the chicken:
- Chicken breast (3-5 will work for this recipe)
- 3/4 cup flour*
- 2-3 eggs (use more if you are using more chicken)
- Oil for frying
For the sauce:
- 1 cup orange marmalade
- 1 cup barbeque sauce (the sweeter variety work better with this)
- 4 tablespoons soy sauce
- 1/4 tablespoon ground ginger
- 1/4 tablespoon garlic powder

Recipe:
- Over low heat in a medium sauce pan, add your sauce ingredients and let simmer for 30 minutes, stirring every so often.

- Cut your chicken into strips or bite size pieces, or however you prefer.
- Get two bowls. Add the eggs into one and whisk, then add the flour into the second.
- Add the chicken into the egg to ensure all pieces are coated, then one by one add them into the flour, making sure to once again fully coat the chicken with flour. You may repeat this step for a crispier breading, but it is not necessary.

- In a frying pan, add a thin layer of your oil of choice and set on medium heat. When the oil is hot, set the pieces of chicken into the oil.

- Fry on both sides until golden brown and fully cooked through. Usually five minutes on each side is a good time. This may also take a few batches.

- Set the chicken pieces that are done on a layer of paper towel, so the extra oil is absorbed.

- When all of the chicken is fried, add the chicken to the sauce, and you're done!

Notes and things I learned along the way:
You can of course substitute the chicken for anything else that fits your liking or needs.
Adding a few chile peppers would help give this an extra little kick to it!
For a slightly less messy way to prepare the chicken, you can create a tempura mix. This is essentially just adding the egg and the flour together into one bowl with cold water until you get a slightly lumpy consistency.
