Brookies are one of those things that I really enjoy, but that I do not do too often. I'm not really sure why. A brookie is a mix of sugar cookies (or really any cookie you choose) and brownies!
Ingredients:
For the sugar cookies:
- 2 cups flour*
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 cup butter*
- 3/4 cup white sugar
- 1 egg*
- 1/2 teaspoon vanilla extract
(This is my sugar cookie recipe!)
For the brownies:
- 2 cups flour*
- 3/4 cup butter*
- 6 ounces unsweetened chocolate, chopped*
- 2 cup white sugar
- 1/4 teaspoon salt
- 3 eggs*
- 3 teaspoons vanilla extract

Recipe:
- Preheat oven to 350F.
Making the sugar cookies:
- Whisk flour, baking soda, and baking powder together.
- In a separate bowl, cream the butter, vanilla extract, and sugar together.
- Add in the egg to the butter mixture and combine.
- Slowly add in the dry ingredients and mix until smooth.
Making the brownies:
- In a small saucepan, melt the butter and chocolate over low heat and stir.
- Stir in the sugar, eggs, salt, vanilla.
- Slowly add in the flour until smooth.
- Once both mixtures are completed, add cupcake/muffin cups into a muffin pan.
- Into the cups, spoon one spoonful of brownie and one small handful of sugar cookie. You can do this in whatever order you choose.

- Place in the oven for 20 - 30 minutes, until edges of the sugar cookie turn golden brown, or until they pass the toothpick test or they have an internal temperature of around 180F.

- Remove from the muffin pan, let cool, and you're done!

Notes and things I learned along the way:
You can combine the cookie dough and brownies together better if you prefer. I personally prefer to keep them more separate!
