Candied orange peel was something I did not think I was going to enjoy, but... it was great. Sweet but still a little tangy, and even just one orange can make quite a lot!

This would also taste great using lemon, lime, or even grapefruit!

Ingredients:

- 1 - 2 orange(s)

- 2 cups white sugar

- 2 cups water

Recipe:

- Peel the orange(s) and cut the rind into 1/4th inch or smaller strips.

- Add the rinds to a larger pot of boiling water and cook for 15 - 20 minutes.

- Drain the water and rinse off the rind strips, set aside for a few.

- Add the sugar and the water together in the same pot as before and bring to a boil.

- Stir to dissolve the sugar, add the rind, and return to a boil.

- Turn down the heat to a simmer for about 45 - 55 minutes; this will soften the rind.

- Drain the rind from the sugar water and set on a foil sheet.

- Sprinkle with more sugar on top. You can also just leave this step out if you don't prefer the extra sugar.

- Let the rinds dry on a wire rack on the counter until they feel like candies. This may take anywhere from 1 to 3 days.
