Kiwi Bread

Me and my mother-in-law had a few kiwis we didn't know what to do with. I thought "why not make like a banana bread?" So we did just that. It definitely turned out to be more of a tart bread rather than a sweet one, but I honestly loved it.
Ingredients:
- 1 1/2 cup sugar
- 1 1/2 cup all purpose flour*
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup butter*
- 2 eggs*
- 1 cup mashed kiwi (this is about three kiwis)

Recipe:
- Preheat oven to 350F and grease or prepare a loaf pan
- Mix flour, baking soda, salt, and baking powder and set this aside.
- In another bowl, mix the butter and sugar together until they are well blended and creamed.
- Add one egg into the butter mixture and mix thoroughly, then add the next egg and mix the same. If you are using mashed banana instead of the egg, just throw the banana in and mix.
- Add in the kiwis and stir.

- Fold in the dry mixture and mix until smooth. Doing a little at a time may help.

- Add the batter into your loaf pan, and sprinkle brown sugar on top, if you choose.

- Bake for 50 - 70 minutes, checking after 50 minutes using the toothpick method, and bake longer if needed. The internal temperature should be at 200F.
- Cool for 15 minutes in the loaf pan, then remove the bread from the loaf pan and let sit on a wire rack until it is at room temperature.
- Slice and you're done!

Notes and things I learned along the way:
I suppose this is more so a quick bread, rather than a full on bread since no yeast is required.
Since kiwis are more acidic, this will be a more tart outcome. I have already readjusted the recipe to be sweeter than when I originally made it, but if you want to make sure it's not too tart, add two cups of sugar instead of 1 1/2 cups.
This would go great with some vanilla ice cream served with it.
